Here's the recipe for Rick's Picks Pickle Watermelon Salad:

Ingredients:

• 4 cups watermelon, cubed (seedless preferred)
• 1 cup pickles, finely chopped (choose your favorite Rick's Picks pickle!)
• 1/4 cup fresh mint leaves, chopped
• 1/4 cup feta cheese, crumbled
• 2 tablespoons olive oil
• 1 tablespoon lime juice (freshly squeezed)
• 1 teaspoon honey
• 1/4 teaspoon black pepper
• 1/4 teaspoon sea salt
• 1/4 cup red onion, thinly sliced (optional for a sharp bite)

Instructions:

Prepare the Watermelon: Cut the watermelon into 1-inch cubes and place them in a large mixing bowl.

Add Pickles and Mint: Add the finely chopped Rick's Picks pickles and chopped mint leaves to the bowl with the watermelon.

(optional) Incorporate Feta and Onion: Sprinkle the crumbled feta cheese over the mixture. If using red onion, add the thinly sliced pieces for extra flavor.

Make the Dressing: In a small bowl, whisk together olive oil, lime juice, honey, black pepper, and sea salt until well combined.

Combine: Pour the dressing over the salad and gently toss to coat all ingredients evenly.
Chill and Serve: Refrigerate the salad for 15-20 minutes to let the flavors meld.
Serve cold, garnished with a few extra mint leaves if desired.

Notes: This salad combines the sweetness of watermelon with the tangy crunch of your favorite Rick's Picks pickles and the freshness of mint, balanced by the creamy saltiness of feta. We used hotties in this recipe (pictured) but this recipe works well with the people's pickle or classic sours cut finely.

Adjust honey or lime juice to taste for a sweeter or tangier profile. Best enjoyed fresh, within a few hours of preparation. Enjoy your refreshing and unique watermelon pickle salad!
PRO TIP: Try adding feta for a nice boost of flavor!
